Not so much a recipe, as an idea… but I haven’t tried this before, so I’m counting it for my weekly resolution! 🙂
Tyler is at a meeting tonight so he wasn’t home for dinner, which means I’m very likely going to revert to one of my favorite meals: cereal or quesadillas. I wanted to put a little more nutritional content into my quesadilla, so I mixed together some spinach, sun-dried tomatoes, and feta as the filling. Word of warning: make sure your spinach is really, really dry. Feta is already a fairly wet cheese, and you don’t want a soggy tortilla. I like to cook my quesadillas in a skillet, with a little oil on both sides.
